A must recipe for the holidays!



OK, so I meant to publish this before I left for Japan for Christmas! For a number of reasons, it didn't happen. However, it is a good recipe, so I thought I better complete the blog anyway. You can save it for next year!

The holiday season is a magical time at the Apple Tree Lane Bed & Breakfast. The Inn is decorated to reflect the festive spirit of Christmas. We even put a Christmas tree in each of our five guest rooms. You will find a gift of chocolate truffles under your tree upon arrival!

After you have settled in, come and enjoy complementary wine & cheese around the warmth of the cozy fireplace in the Orchard Room. Let us help you plan your day of specialty holiday shopping, a horse drawn carriage ride, or a trip to the woods to cut your own Christmas tree to take home! After a restful night sleep on feather beds and wonderful linens, come enjoy a full gourmet breakfast.

One favorite during the holidays is our Eggnog Streusel Muffins. We are happy to give you the recipe below to make at home for your family and friends. Happy Holidays!



Eggnog Streusel Muffins
Ingredients:
Muffins
2 1/4 cups flour
1 cup sugar
1/4 t nutmeg
1/2 t cinnamon
2 eggs, lightly beaten
1 cup eggnog
1/2 cup butter, melted & cooled
1 t vanilla
1/2 t rum extract
Streusel Topping:
1/3 cup flour
1/3 cup sugar
1/4 t cinnamon
1/4 t nutmeg

Muffin Directions:

Grease muffin tins. In medium bowl, combine flour, sugar, baking powder, cinnamon and nutmeg. Make well in center and set aside. In another bowl, mix eggs, eggnog, melted butter, vanilla and rum extract. Add mixture all at once to flour mixture. Stir until just moistened and lumpy. Fill muffin cups 2/3 full.

Streusel Directions:

Mix flour, sugar, cinnamon and nutmeg. Using pastry blender, cut in 2 T butter until the mixture resembles coarse crumbs.


Sprinkle streusel mixture over batter. Bake 375 oven for 20 minutes or until golden and toothpick test comes out clean. Makes 12 muffins
