Sharing breakfast recipes is always something we enjoy at the Apple Tree Lane Bed & Breakfast! Our historic homestead was once one of the largest apple orchards in the region, producing 5,000-6,000 bushels of apples per harvest! Currently, on our 7.5 acres, we only have 6 apples trees and 3 pears trees, although we are surrounded by these historic orchards! We have plenty of apples to make some wonderful tasting breakfasts!
We love to use OUR apples whenever possible, (I even freeze slices and they work well in this cake recipe) but any apples that are your favorite will work. This Apple Bundt Cake recipe is a simple but delicious recipe that has been in my recipe book forever. I have adapted it slightly over the years to include pecans or walnuts for a different twist. Enjoy!
1/4 cup of sugar-cinnamon mixture
4-5 apples of choice, cored, peeled and chopped small
1 cup canola oil
2 cups all-purpose flour
2 cups sugar
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
Optional nuts to taste
2 tablespoons butter
1/2 cup firmly packed brown sugar
2 Tablespoons milk
Preheat oven to 350 degrees. Grease the bundt pan and coat it with the cinnamon-sugar mix. Mix apples, eggs and oil with mixer. Add four, sugar, baking soda and cinnamon; mix well. Add optional nuts. Pour into pan and bake approximately one hour. Rest cake in pan for 10 minutes and then invert onto a cake plate.
For glaze, combine butter, brown sugar and milk in a medium pan. Heat to boiling and cook 2 minutes, stirring constantly. Spoon over cake. Cool all before serving. Garnish with apple slices and pecan pieces.
