|Wolf River Apples from our Orchard|
I tried a new recipe last week that several guests have asked for, so I thought I would share it with all of you via this blog. It is simple and delicious.
The Wolf River apple is a terrific baking apple, so it works very well in this recipe. I think any apple would work just fine though.
The recipe comes from a recipe book I received as a gift from one of my guests, called "The Joy of Apples", and I adapted the recipe just a bit.
Frosted Apple Bars
2 1/2 cups flour
1 T. sugar
1 t. salt
1 cup vegetable shortening
2 egg yolks plus enough milk to measure 2/3 cup (save the whites for later in the recipe)
10 medium apples, peeled, cored and sliced thin (but not to thin!)
1 cup sugar, mixed with 1 1/2 t. ground cinnamon (try Penzeys Spices, Vietnamese Cinnamon-Extra Fancy It has a wonderful flavor)
2 egg whites
1 cup powdered sugar
3-4 t. water
Preheat oven to 350 degrees.
Mix first three ingredients in a medium bowl. Cut in shortening. Stir in egg yolk mixture to form dough. Roll out half the dough on a lightly floured surface; place onto a 15x10x1-inch jelly roll baking sheet (note it does not fill the entire sheet).
Arrange apple slices evenly over dough (leaving enough of dough edge to pinch closed). Sprinkle with sugar-cinnamon mix. Roll out remaining half of dough; place over apples. Pinch two ridges of crust to seal. Beat egg whites in a small bowl until frothy; brush lightly over crust. Bake 1 hour.
Whisk powdered sugar with water and frost cooled bars. Slice bars in squares. Refrigerate leftovers.
